Challenge Flapjack: The Round Up!

Challenge flapjack round upWell I for one have been totally inspired by this little challenge that I have been running on my blog.  I have received some fabulous entries and even experimented a bit more myself with the oats and sugar.  More on my bonus flapjack recipe at the end, but first here’s the round up.

What about this for a taste of summer as the nights are drawing in?  Janine from Cake of the Week blog has sent in a strawberry and white chocolate flapjack which I have to say is one of my favorite personal combinations.  I love the way that lashings of white chocolate and fresh strawberries have been spread across the top for extra indulgence.  They look incredibly tempting to me.

 

This next flapjack is a fab combination of flavours too.  Choclette from Chocolate Log Blog created a fig, almond and chocolate chip honey flapjack.  It looks amazing and having baked with figs myself many times I know that pairing it with nuts is perfect.

Who could resist this next flapjack with such a lush sounding title?  Cake, Crumbs and Cooking blog has entered their black bottom triple chocolate flapjacks!  Yes you did hear that right…triple chocolate!!  I don’t think I need to say any more other than these have gone on my ‘to bake ‘ list without a second thought.
Caroline from Caroline Makes came up with her jammy flapjacks by randomly picking out a an item from her cupboard and pulling out a jar of jam.  And don’t these sound so comforting?  Flapjacks with a gooey jam layer sound perfect for afternoon tea snuggled up on the couch reading a book.  Actually, for me that is a bit of a fantasy because I never sit on the couch with a book.  I would chomp on these just before I set off on the afternoon school run.
This next apple and cinnamon flapjack recipe and particularly the pictures, nearly had me licking my computer screen.  But then I am not surprised as the lovely Dom from Belleau kitchen has that effect with his blog on many people.  Again lovely combo of autumn flavours, using seasonal ingredients.  Big smiles from me!

Oh, I do love a spin on a British classic!  So I’m thrilled that Beckie from Beasteas blog decided to enter her unique sounding bakewell flapjacks. Brilliant idea and I love bakewell tart, so I’m pretty sure I’m going to love these too.  I’m just wondering if you can cover them with custard and eat them though?  Yeah, reckon I could!

Jen from Blue Kitchen Bakes tempted me with a ‘just out of the oven’ photo on twitter before sending her honey and ginger flapjacks over.  Great strategy as Jen had me very excited to see the blogpost that would accompany her wonderful looking flapjacks.   These look to me to be a real crowd pleaser and I know for a fact my mother in law would love them, (she adores ginger).  So I’m thinking I might make a batch to take up at Christmas time.

 

Ruth from The Mixing Bowl blog sent in her own flapjack recipe that has walnuts, cranberries and a yogurt and white chocolate coating on top.  Sounds divine, as does everything Ruth makes.  Her blog is full of lovely recipes with a genuine and honest tone to the writing.  I like it a lot and recommend a visit next time you 5 mins spare online.
This final entry into challenge flapjack is from the wonderful sounding Mrs Puddle Duck’s Cake and Pudding Quacks blog who has entered chewy banana and sultana flapjacks.  I have to say that I love a crunchy flapjack as much as I do a chewy one so this recipe sounds pretty good to me.  I’m liking that it has banana in it too.  If you can get a portion of your five a day whilst eating flapjacks then it’s almost guilt free…almost!

So now that these are up, Sainsbury’s are going to take a look and let me know who they pick to be the winner and I will let that person know as soon as I am told myself.  Goodness knows how they are going to choose!  Good luck everybody!!

But just before I go, I wanted to add another of my own flapjack recipes in as I was motivated to make them by this challenge and a few of the blog challenges that are running this month too.  Just to clarify this is not an entry into my own challenge flapjack.  Just another recipe to share.

Pumpkin, cranberry and chocolate flapjack

I’m finding out that you can add pumpkin puree to pretty much anything that you bake and flapjacks are no exception.  Once again my family adored this oaty variation and I felt a real sense of maternal instinct to place these in the lunchbox of my girls for 3 days running last week.  Feeding them with a healthy homemade snack felt good.  They appreciated the chocolate on top and happily enjoyed/ignored the pumpkin and cranberries.

What you need

  • 300g rolled oats
  • 60g light soft brown sugar
  • 70ml agave syrup
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1 tsp vanilla paste
  • 100g pumpkin puree
  • 50g cranberries
  • 50g milk chocolate melted

How to make

  1. Pre heat your oven to 180c and grease a meduium sized baking tray
  2. Put all of the ingredients apart from the melted chocolate in a bowl. Mix with a wooden spoon until well combined
  3. Pour into baking tray and bake for about 25 mins until the flapjack is golden.  Keep your eye on it though as you don’t want to burn the edges
  4. Once cooled drizzle the melted chocolate on top and enjoy

It can also be entered into the One Ingredient Challenge hosted by Nazima at Franglais Kitchen.  Again the theme this month pumpkin.

I can also enter for the first time into the calender cakes challenge run by Dolly Bakes and Laura Loves Cakes.  The theme this month is Halloween and I think the addition of pumpkin into these flapjacks makes them perfect for Halloween.

    What a fabulous round-up Fleur. As a big fan of flapjacks I’ve just got several years worth of additional inspiration from this little lot. Your final recipe sounds delicious too and I now want to try flapjacks using agave syrup. Thanks for entering it into WSC :)

    Great roundup! I’ve got a lot of flapjack recipes to try now. Yours look really good, too – I would never have thought to out pumpkin and cranberries together!

    Now I know where to come for my flapjack inspiration. So many versions and all of them look so yummy. I do like the idea of using agave syrup and I agree with you pumpkin has so many uses in baking, I am really enjoying it!
